A crispy, addictive chicken dish coated in a sweet and spicy Bang Bang sauce that’s sure to impress at any dinner table.

- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch bite-sized pieces
- 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice/white vinegar)
- 1 cup all-purpose flour
- 1.5 cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking oil spray (for air frying/baking) or 1 cup neutral oil (for shallow frying)
- 1 cup mayonnaise (Kewpie recommended)
- 1/2 cup sweet chili sauce
- 2–3 tbsp Sriracha (adjust to taste)
- 1 tbsp honey (or maple syrup/agave)
- 1 tsp fresh lime juice (optional)
- 1/2 tsp toasted sesame oil (optional)
Instructions
- Prepare the chicken by cutting it into 1-inch pieces. If using buttermilk, soak the chicken for 30 minutes to 2 hours, then pat dry.
- Make the breading mixture by combining flour, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper in a shallow dish.
- Bread the chicken pieces by dredging them in the breading mixture, ensuring an even coating. Spray lightly with cooking oil if air frying or baking.
- For the Air Fryer: Preheat to 375°F (190°C). Cook the chicken in batches for 10-15 minutes, flipping halfway, until golden brown and cooked through.
- For Baking: Preheat oven to 400°F (200°C). Place breaded chicken on a lined baking sheet and bake for 20-30 minutes, flipping halfway through.
- For Shallow Frying: Heat neutral oil in a skillet to 350°F (175°C). Fry chicken pieces in batches for 3-5 minutes per side until golden brown.
- While the chicken cooks, whisk together the mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, and sesame oil in a bowl to make the Bang Bang sauce.
- Once chicken is cooked, toss it in the Bang Bang sauce until well coated. Serve immediately with optional garnishes like sliced green onions and sesame seeds.
Notes
For extra crispiness, spray breaded chicken with oil before cooking. Store chicken and sauce separately if you anticipate leftovers to maintain crispiness.
